Yard to Table Eggplant / Zucchini Parmesan Recipe

We we are back in my kitchen for a special treat. Eggpant / Zucchini Parmesana! Straight up Yard to Table! Come along with me as we pick the veggies, cook the veggies, and eat the veggies! This was a first time making and eating this dish and it was delish! I used my home grown eggplant, zucchini, basil, and Malabar Spinach.
